Hi Scott:
New to this site and to wine making. I saw your video about degassing wine using a wine pump. I tried it last night and saw a lot of bubbles coming out of the carbouy. How often should this be done? Do I degas, leave it for a couple of weeks, and then try it again? What is a good indicator that the process is complete?
Thanks, Dianne

Hey Folks,
Alright … so the cherries are clean and have been stoned/pitted therefore it is now time to press the fruit so that we can separate the juice from the pulp.
Now, I can tell you that for my first few batches of fruit wine I wanted to go a bit on the “cheap” so I used a potato masher to press the fruit. While this certainly works I can tell you that it really sucks doing it as you have to put a lot of muscle into it and you are left thinking that there must be a better way of doing th…

If you haven't heard already I recently announced the birth of what I have dubbed "The Cherry Wine Project". I thought I'd begin by explaining what it is and answering a few questions you might have about it.
What Is It?
The purpose behind The Cherry Wine Project is to help teach people how to make fruit wine - plain and simple!
I figured why not arm myself with a digital camera and take pictures while I make a batch of cherry wine explaining what I was doing as I did it.
Why Cherr…

Have you ever had sumac tea?? I make my wine exactly how I like my tea. First, as this is a flower (really a berry except that is nearly impossible to seperate flowers from berries) wine, it takes the longest to make of anything I have ever done. You will need 10lbs of sugar for 5 gals. one teabag (for tannen) and 5 tsp of lemon juice (for cit. acid) . I take a 5 gal bucket of sumac horns and add all of the sugar. steep with 2 1/2 gallons of boiling water which dissolves the surger nicely. Add 2…

I'm glad you're here and I look forward to connecting with you.
I'm just like your neighbor next door who happens to make wine and really enjoys teaching people how to do it as well.
The main goal of "The Cherry Wine Project" is to share my passion for wine making and help other people learn how to make wine themselves.
I regularly have people emailing me questions about wine making (which I love by the way) and therefore thought it might be worth having everyone ride "shotgun" beside my wife…
