Dear Scott, Yesterday, I picked 22lbs of blackberries, and discovered (to my horror) that red raz are almost finished. This is the earlest I have seen this. I picked monsters as big as a quarter. This is the best season for berries I have seen in a long time. This is how I'll try to do it for the rest of the season, Red raz, more blackberries, blueberries, wild grape and hard fruits to end the season. I am sure that I will find some things not on this list (hopefully enough honey to make a batch of mead[this really is the nectar of the gods]). The only limits I have now is carboy space, and peskey revenuers bothering me. I give a lot of wine away because of that.I have to go get my red rez now take care, and I'll keep you posted on how it's going. Your friend Rog

Hi Scott: I like your latest version of your book, well done. Yes I read your blog on the tap-a-draft. I saw a different Machine in Red Deer at a wine store last week. It was actully a soda pop carbonater. The lady said with a little practice you could carbonate wine a little or a lot. The good news was it would cost about $3 a 23 liter kit for the co2. The co2 bottle could be refilled at any Can. Tire Store. The machine I believe was $150 including a wine kit......Gord

Putting The “Squish” On Your Fruit

Hey Folks,

Alright … so the cherries are clean and have been stoned/pitted therefore it is now time to press the fruit so that we can separate the juice from the pulp.

Now, I can tell you that for my first few batches of fruit wine I wanted to go a bit on the “cheap” so I used a potato masher to press the fruit. The Birth Of The Cherry Wine Project

If you haven't heard already I recently announced the birth of what I have dubbed "The Cherry Wine Project". I thought I'd begin by explaining what it is and answering a few questions you might have about it.

What Is It?

The purpose behind The Cherry Wine Project is to help teach people how to make fruit wine - plain and simple!

I figured why not arm myself with a digital camera and take pictures while I make a batch of cherry wine explaining what I was doing as I did it.

I'm just like your neighbor next door who happens to make wine and really enjoys teaching people how to do it as well.
